Super-duper veggie sandwich

Oh my, do I love a full, tasty and filling sandwich!  Being a meat eater, it’s hard for me to imagine a yummy sandwich without meat.


But low and behold – thanks to, I have found one!  This is a perfect lunch sandwich!

Super-duper veggie sandwich (makes 1 sandwich) – 325 kcal.

  • 1 tbsp cream cheese (original calls for goat cheese or other spread)
  • 2 slices rye bread
  • 1 leaf romaine lettuce
  • 1/4 avocado
  • 1/4 cup alfalfa sprouts
  • 2 slices tomato
  • 3 slices cucumber
  • 1/4 cup grated carrot
  • 2 slices mozzarella
  1. Spread both slices with cream cheese.
  2. Add grated carrots to one slice, and alfalfa to the other.
  3. Top with remaining ingredients and close the sandwich.


Don’t you just want to sink your teeth into this???  YUM!!!
