Oh my, do I love a full, tasty and filling sandwich! Being a meat eater, it’s hard for me to imagine a yummy sandwich without meat.
But low and behold – thanks to http://www.skinnyms.com, I have found one! This is a perfect lunch sandwich!
Super-duper veggie sandwich (makes 1 sandwich) – 325 kcal.
- 1 tbsp cream cheese (original calls for goat cheese or other spread)
- 2 slices rye bread
- 1 leaf romaine lettuce
- 1/4 avocado
- 1/4 cup alfalfa sprouts
- 2 slices tomato
- 3 slices cucumber
- 1/4 cup grated carrot
- 2 slices mozzarella
- Spread both slices with cream cheese.
- Add grated carrots to one slice, and alfalfa to the other.
- Top with remaining ingredients and close the sandwich.
Don’t you just want to sink your teeth into this??? YUM!!!
